There is nothing more comforting on a cold and rainy day than a healthy bowl of chili! Served over rice with some grated cheddar cheese and sour cream I have to say it is absolutely delicious. it is a meal all by itself. Then there is the baked cheesy garlic mashed potatoes. This is a great side dish and even though it can be eaten after mashing, it is so much better if it is baked until it is crispy on top! I love both of these recipes so much! The frizzled onions are a great addition to any meal, but I especially love them because not only are onions healthy and delicious, but I grow them in my backyard! Then there is the banana bread that you can see I cooked as muffins. The aroma of the baking banana bread makes everyones mouth water... Then when they are done and still warm, well, they never taste better than at that moment! I especially like the banana bread because it uses up those old bruised, brown bananas that nobody wants to eat! I simply freeze them (yes they turn black), and then defrost and use them to make the bread when I am ready. This makes such a yummy sweet banana bread! Happy New Year! There is nothing more comforting on a cold winters day than a warm cup of homemade soup or the warmth and smell of oven roasted sweet potatoes. Why not start this new year with some simple fresh and healthy recipes? Oven roasting fresh vegetables is a great winter alternative to grilling on the barbecue and using the oven helps warm up the house too! My homemade soup includes nice fresh vegetables, but it is also a great way to use up those leftovers from past meals as well. Any little bit of rice, vegetable, or even meat that is left over but not enough to use for another meal goes in a baggie and into the freezer. Then when I make my soup, out the baggies come and into the soup the leftovers go! We do NOT waste food and every soup is different! Both recipes are simple, of course. I just love baked foods in the winter. They are just so comforting. Not only does the oven make the house feel toasty warm, but you get a great cooking smell throughout! Notice that my "Faked" Ziti is in a metal tin? Thats because I usually make several at one time and freeze them for a quick and easy, ready to go meal in the winter. Just defrost and cook - my kind of weeknight/work-night meal! The zucchini recipe is actually from a work friend (thanks Andrea!). It is now one of my husbands favorites to make due to it's simplicity and its delicious taste. He has also changed it up and swapped out the zucchini for broccoli and or cauliflower. Last time he even added some chopped ham! Yum! The only limitations are your imagination... Thanksgiving is coming soon and that means leftovers! There are so many different ways to cook the yummy turkey, gravy, and vegetable leftovers, but this Chicken Pot Pie recipe leads the list in my family! How sad would it be to only make this once a year though? And what about the fact that the recipe is called Chicken Pot Pie instead of Turkey Pot Pie? Well that's because in our house this recipe is made about once or twice a month all fall and winter long! Sometimes we make it with all brand new food by just cooking up some fresh chicken, using a can or package of gravy, and buying a bag of frozen mixed vegetables. But my favorite way takes a few weeks to prepare for because it uses leftovers of course! Every time we have some vegetables or chicken left over from dinner that is not quite enough to use for anything else, instead of throwing it away I put the small amount into a snack baggie which then goes into a larger freezer bag to be saved until I have enough ingredients to make this awesome pot pie! Believe it or not I even freeze leftover gravy! Nothing gets wasted in this household! This is such a simple recipe it can be prepared in literally under 20 minutes!
