In case you haven't noticed, I am clearly not a chef. I don't even come close. I actually am not even that crazy about cooking, however I enjoy making my family happy so I cook for them. That is why the recipes I share are pretty simple and no big deal. So please, if you were expecting these awesome fancy dishes you should know right now you won't find them here. The only thing I can maybe boast about with respect to the recipes I share is using fresh foods (homegrown preferably) and trying to keep the rest of the ingredients as healthy and simple as possible! Being that it is now fall I am sharing my recipe for eggplant parmesan (and tomato sauce since it is needed). I consider this a fall and winter recipe because it requires the oven to bake it. When making it I usually make at least two trays, one to eat and one to freeze for later in the season. You can click on the recipe cards below or use the button under them to download the pdf file. It will print one sheet of 8 1/2 x 11 paper, preferably cardstock paper. Cut out each of the 4 x 6 inch recipe card and put them in your book! They always come two recipes per sheet in an effort to not waste paper!
